Post-Run Nut and Date Bites - The Perfect Treat with a Nice Cup of Kaphi

Well, yesterday I did my first ever Park Run and having not done too much out-of-breath exercise for a while, I was not only chuffed that I'd done it, but I was starving afterwards!


These nut and date little bites were the perfect pick-me-up, especially with a nice cup of Kaphi as a post-workout treat. Here's how you can make it at home in next to no time.


Easy no-bake date and nut bars


Ingredients for the Post-Run Nut and Date Bites

(makes ~12 bars)


  • 250g soft pitted dates (Medjool are best)

  • 200g mixed nuts (almonds, walnuts, cashews, pecans), roughly chopped

  • 2 tbsp nut butter or coconut oil

  • 1 tsp vanilla extract

  • Pinch of salt

  • Optional: 1 tsp cinnamon, 2 tbsp seeds, a handful of oats


Method


  1. Soak dates in hot water for 10 minutes if they’re dry, then drain well.

  2. Toast the nuts in a dry pan or 180°C oven for 5-8 minutes. Cool, then pulse in a food processor until roughly chopped (leave some chunks).

  3. Blend the dates, nut butter, vanilla and salt until a sticky paste forms.

  4. Add the nuts and pulse a few times, or mix by hand, until combined.

  5. Press firmly into a lined 20cm square tin. The pressing is what holds them together.

  6. Chill for at least 1 hour, then slice.


Tips


  • If the mixture is crumbly, add a splash more water or another date.

  • If it’s too sticky, add more nuts or oats.

  • Store in the fridge for up to 2 weeks, or freeze for 3 months.
