Summer Fruit Loaf Cake | Easy Recipe

If you've been out with the Littles (and Bigs) foraging, or have an abundance of summer fruits waiting to be used up, this is a really easy and very delicious recipe. A slice goes perfectly with a nice cup of Chikka specialty Indian coffee - perfect for those late summer days. Here's what you need:
Ingredients
2 large eggs (weighing roughly the same as the sugar)
2 tsp vanilla essence
150g of very soft butter
25g of organic ghee
175g of golden caster sugar
250g of self raising flour
175g of summer fruit (100g and 75g)
140g granulated sugar (or to taste)
1-2 tbs lemon juice
Method
Heat oven to 180 C
Beat the caster sugar with the butter and ghee.
Add the beaten eggs slowly.
Add the flour.
Add the vanilla essence.
Mix throughly and the batter has a dropping consistency.
Add a third of the batter to the bottom of a lined baking tin.
Reserve 75g of summer fruits and from the 100g, add 33g of fruit to the top of the batter.
Then another third of batter and a third of the fruit, and then finally the last lot.
Bake in the pre-heated oven for 45 mins to 60 mins (depending on your oven!)
Meanwhile, add the remaining fruit, granulated sugar, and lemon juice to a bowl.
When the cake is ready, spoon the fruit on top.
Enjoy with a cold glass of lemonade or a nice cup of Chikka Indian specialty coffee!
