Spooktacular Biscuits for Halloween

Here's how to make some easy spooktacular ghostie biscuits that are a treat with a spooky mug of The Blesséd Brew Kaphi.


Makes about 12 spooktacular ghostie biscuits


Ingredients


  • 115 g Fairtrade golden caster sugar

  • 115 g softened butter

    1beaten large free-range egg

  • 250 g plain flour

    plus extra for dusting

  • 12 tsp or good dollops of morello cherry conserve


Method


  1. Pre-heat your oven to 180°C/160°C fan/gas mark 4.


  2. Add the 115 g sugar and 115 g butter to a large mixing bowl and beat until light and fluffy. Add the beaten egg and whisk again until combined, then sift in 250 g flour. Fold until well combined. It doesn't feel like it will come together when you start, but it does. (I actually added a drop of milk, but I didn't think it needed it, but it still worked with it).


  3. Lightly flour your work surface and work the biscuit dough into a ball. Cover with bees wax food wrap film then pop into the fridge to rest for 40 minutes (I've stopped using cling film because it's not generally recyclable). While the dough is resting is a great time to have a cup of coffee!


  4. Bring the dough out of the fridge and leave to come up to room temperature slightly. Roll the dough out into a disc, about 2mm thick, moving around as you roll so that it doesn’t stick - it is very sticky!


  5. Using a heart-shaped cutter, cut 12 hearts out of the dough. Re-roll if necessary. Then, cut the hearts in half from top to bottom (heartbreaking, I know, but don't worry) and pull them slightly to make the bottom bits look more ghostly. You should end up with Pop the 24 pieces, or just make sure you have an even number.


  6. Using the round end bit of a handle of a spoon of fork etc, make a small circle or grinning mouth and two small eyes out of half the ghost-shaped biscuits.


  7. Bake for 8-10 minutes, until lightly golden. (Mine did take longer, but I forgot to pre-heat the oven!)


  8. Remove from the oven and leave to cool.


  9. Once cool, lay the biscuits out on a lined plate or tray. Top half (the un ghostie face bits) with the morello cherry conserve (12 tsp) and sandwich the cutout ghosts on top.


  10. Enjoy the spooktacular ghostie biscuits with another cup of The Blesséd Brew Kaphi!
